I am a huge fan of Mediterranean food and this breakfast fits all the comfort food criteria. I make this on a lazy Sunday with my husband and binge watch our favorite TV series.
Ingredients
Serves 4
4 medium size yellow potatoes diced
1/2 large shallot finely diced
3 cloves of garlic finely diced
3 tbs. olive oil (make sure you coat the bottom of the pan)
6 – 8 grape tomatoes quartered
1/2 cup feta cheese
2 tbs. or to taste Italian parsley
4 sunny side up eggs
Directions
Sauté potatoes on low for 10 – 12 minutes. Add shallots and garlic, season with salt and pepper. Keep the mixture on low so you don’t get any browning on the mixture, approximately 5 to 8 minutes. Once the potatoes are tender; add the feta, tomatoes, and parsley. Prepare the sunny side up eggs and serve a portion of the potatoes with a sunny side up egg placed on top. Enjoy a party in your mouth that plays Greek favorites.
Note
The key to a perfect sunny side up egg is to heat the egg on a very low heat until the egg white is fully cooked.
