This is a simple but tasty dinner just for two. This is perfect for a couple, saves money and creates less leftovers.
Ingredients
serves two
1/2 rack baby back ribs with silver fat trimmed
Rub
1 1/2 tbs. Adams Reserve brand House Spice (or your favorite blend)
1/2 tbs. kosher salt
1/2 tsp. white pepper
1 1/2 tbs. brown sugar
1 tbs. cumin
Combine all dry ingredients and rub the ribs on both sides completely. Wrap ribs in parchment paper lined aluminum foil. Refrigerate for a minimum of 1 hour. Pre-heat oven to 350 degrees. Remove ribs and allow them to rest and come to room temperature. Approximately 10 – 20 minutes. Bake ribs in pre – heated oven for 1 hour and 30 minutes. Coat ribs with easy “Doctored Up” Cheater BBQ Sauce and return to 300 degree oven for an additional 30 minutes. Remove from oven and let rest for 10 minutes.
” Doctored Up” Cheater BBQ Sauce
1 8oz. bottle of bbq sauce
1 can drained tomato with green chiles
2 1/4 tbs. dark molasses
2 tbs. brown sugar
1/4 cup soy sauce
Combine all ingredients in a medium saucepan over medium heat. Simmer for 30 minutes over medium heat partially covered. Stir occasionally until sauce is thickened.
Quick and Delicious Side
1 8oz. premade coleslaw mix
1/2 cup mayo ( I use Dukes)
1 tbs. Dijon mustard
1/4 cup white wine vinegar
1 dash hot sauce.
1 small green apple small diced
1/4 cup diced pistachios
3 tbs. dried cranberries diced.
Combine all wet ingredients together, salt and pepper to taste. Combine slaw mix, green apple, pistachios, and cranberries in separate bowl. Fold mixed wet ingredients into slaw mix and combine until smooth and creamy. Refrigerate for one hour.
